Kombucha is a fermented drink made with tea, sugar, bacteria, and yeast. The bacteria and yeast grow together to form a culture, which is then added to the sugar and tea. During fermentation, yeast cells break down sucrose into fructose and glucose, which are then metabolized into ethanol. Acetic acid bacteria (AAB) oxidizes the ethanol to produce acetic acid, which is responsible for the kombucha’s sour taste and lower pH
